Kitchen Sunday - Peanut Butter Nutella Cookies

Ok, it's technically not Sunday today. But I was too busy lazy to write up a post yesterday. After the weekly blueberry muffins, I made peanut butter Nutella cookies. I found a recipe on Pinterest but decided not to follow their recipe. I made my usual recipe and instead of baking the cookies first then making the indent and put the Nutella in after, I made variations.

I indented the cookie dough, put in a dab of Nutella, then baked them. They didn't look as good as the pictures in the original recipe - the Nutella formed a crust and fell out of the cookies when you bite into them. Still, they were tasty. I know they're tasty because I left 24 cookies on the rack to cool. This is NOT 24 cookies!

Kitchen Sunday - Peanut Butter Cookies

Peanut butter cookies

The usual Sunday batch of blueberry muffins were done quickly this morning. The weather is wet - very wet today. Just did not feel up to going to the Farmer's Market in this rain. Made peanut butter cookies instead. I think it was a great decision.

The original recipe came from a newspaper or magazine clipping way back from the dawn of time. It's a pretty straightforward recipe - 1 cup sugar, 1 cup peanut butter, 1 egg, mix and bake at 350 for 8 mins. Over the years it's been modified.

Peanut Butter Cookies

1 cup brown sugar
2 cups peanut butter (chunky or smooth works depending on what you like.)
1 large egg
1 tsp vanilla
1/4 cup dark chocolate chips (optional)

Mix everything together. Scoop dough onto your cookie sheet, about a tablespoon size ball, and flatten slightly with a fork. Bake 10 mins at 350 deg. Let then cool slightly before moving off the cookie sheet otherwise, they'll crumble.

Peanut Butter Cookies

I made peanut butter cookies today. It's the easiest recipe in the world.

1 cup peanut butter
1 cup brown sugar
1 egg.

Mix, bake for 10 mins at 350 deg.

That's it. It's a really small batch so I usually x4 to get enough cookies to last more than an hour. It's best to use peanut butter that's smooth and not separated. It's impossible to stir the oil back in and makes lumpy cookies. Family doesn't mind anyway and it gives the cookies pockets of peanut butter. Still tasty but hard on the wrists.

Knitting news

Still working on the Pinwheel sweater. Just knitting up the i-cord border now and then have to start the sleeves. It knits up fast but all that plain knitting in the round is really boring. I was getting to that point where I want to poke my eyes out with my lace needles.

Doll Pattern

I've had several people email me asking about the pattern. I don't mind sharing it but I need to re-write my doll pattern. I was making notes as I went along on my ipod touch when I accidentally lost the app (bad sync on my part) and lost all the info. It's easy enough to re-write but just have to find the time to do that.

Things that makes me happy:

1. A picture of my nephew in his transformer costume. He won first place!
2. Birds in the garden. I love watching the birds in my backyard.
3. Rainy weekends - guilt-free days of sitting on the couch, knitting, and watching old movies.
